Asparagus Salad

In a hot climate like Australia, we tend to love a good salad. And this one’s a beauty. Many recipes with asparagus can be quite fiddly but this one is easy to prepare and looks bright and enticing.

It’s good for the gut too. You may not know it but asparagus has some surprising health benefits. It is:

  • A prebiotic, meaning it encourages healthy gut bacteria, which can help to reduce inflammation
  • A rich source of folate and Vitamins C and E
  • Packed with anti-inflammatory polyphenols
  • Full of potassium, which can play a role in reducing blood pressure

How to use

It’s a great accompaniment to a main meal and looks great on the trestle table at at backyard BBQ.

Ingredients

  • 500 g strawberries/red radishes (depending on the season)
  • 500 g green asparagus
  • Parmesan (use as much or as little as you like depending on your personal taste)
  • Balsamic vinegar
  • Olive oil
  • Salt and pepper
  • Cress to garnish

Method

  • Start by cooking the asparagus in slightly salted water until it is firm to the bite.
  • While that’s in the pot, wash and slice the strawberries (or the red radishes).
  • Create the dressing by mixing the olive oil with a few drops of balsamic vinegar then some salt and pepper.
  • Finely chop the cress and sprinkle it on top.
  • Drizzle dressing over the cooled asparagus mixed with the strawberries/red radishes.
  • Add a few Parmesan shavings to finish.
  • Take a moment to appreciate your creation then tuck in and enjoy it.
