  • 1 cup brown rice flour
  • 1 cup shredded coconut
  • 1 cup rice flakes
  • 1 cup brown sugar
  • ½ cup sunflower oil
  • 2 tblspns golden syrup

Preheat oven to 180c and line a lamington tray with baking paper.

Mix together the rice flour, coconut and rice flakes in a large bowl.

In a small saucepan place the brown sugar, oil and golden syrup. Stir continuously on medium heat for 5 minutes or until sugar is dissolved.
Carefully pour sugar mixture into flour mixture and mix thoroughly.

Press mixture firmly down into the prepared lamington tray and bake for 20 minutes or until golden.

Allow to cool at room temperature before cutting into pieces.

Makes 20 pieces
