Chicken Schnitzel

Ingredients:

  • 3 single chicken breast fillets
  • 1 bunch fresh chives – finely chopped
  • 1 x 100g packet plain rice crackers
  • 1 egg
  • 1 cup rice milk
  • 1 pinch sea salt
  • 1 cup olive oil

Using a blender or food processor, process the whole packet of rice crackers until fine crumbs form.
In one bowl whisk the egg and rice milk.

In another bowl, add the rice cracker crumbs, chives and sea salt. Mix well.

Cut each chicken breast into quarters. Make one cut down the length to make it thinner, and one across to make it smaller.

Working with one piece of chicken at a time, dip it into the egg mixture, then into the crumb mixture. Press the chicken down into the crumb mixture, so a good coating is formed.

Set aside on a plate until ready to cook.

Heat the oil in a large frying pan.

Cook chicken schnitzel on a medium heat for 3-4 minutes either side, or until the chicken is thoroughly cooked and the outside is golden.

Serve immediately with fresh vegetables.

Anzac Slice Recipe - ImuPro

Ingredients:

  • 1 cup brown rice flour
  • 1 cup shredded coconut
  • 1 cup rice flakes
  • 1 cup brown sugar
  • ½ cup sunflower oil
  • 2 tblspns golden syrup

Preheat oven to 180c and line a lamington tray with baking paper.

Mix together the rice flour, coconut and rice flakes in a large bowl.

In a small saucepan place the brown sugar, oil and golden syrup. Stir continuously on medium heat for 5 minutes or until sugar is dissolved.
Carefully pour sugar mixture into flour mixture and mix thoroughly.

Press mixture firmly down into the prepared lamington tray and bake for 20 minutes or until golden.

Allow to cool at room temperature before cutting into pieces.

Makes 20 pieces

Apple, Banana and Date Breakfast

Apple, Banana and Date Breakfast Joy

Ingredients: 2 ripe bananas, 2 sweet apples, a few Medjool dates.

Method: Amazingly simple and filling. An energy filled breakfast to start your day, packed full of natural sugars and carbohydrates.

Peel and chop bananas into a bowl. Using your hands, start to squish the bananas breaking them up with your fingers. You want a nice soft, lumpy texture. Use a fork if you don’t want to get messy hands! Remove the pip from the Medjool dates and chop roughly, add to bananas and massage into mixture. Grate the apples and stir through. Serve immediately.

Tip:

Dried fruits like dates, apples, prunes (plums) are all high in carbohydrates and natural sugars. They are also high in dietary fibre and several vitamins and can be used in moderation to help satisfy a sugar craving.

Medjool dates are fresh and soft, ranging from -20 per kg. Eat 3-4 when you have a sugar craving. A kilo will last you a while and be a lot cheaper than buying chocolate bars or lollies on a regular basis.

Pitted dates are the hard dried variety that you can find in most greengrocers and range from .50-4 per kg which makes it a very economical sweetener.

A handful (6-8) of pitted dried dates soaked in 100ml water for 24 hours is enough to sweeten one litre of liquid. If you are making a smoothie in the blender with fresh fruits, you can add the dates plus their soak liquid for extra sweetness and carbohydrates.

The soaked dates will last up to a week in the fridge. Half fill a glass jar with dates and top up with water and keep on hand to add to your smoothies.
